This exceptional gin is aged for 82 days in New Forest oak, with the alcohol percentage adjusted every five days to unlock distinct flavours from the wood. Beginning at 60% ABV, the initial stages draw out delicate vanilla undertones. As the ABV gradually lowers, rich caramel notes and a gentle sweetness develop, harmonising with the oak’s depth to create a smooth and well-balanced gin.
